You'll have to imagine a picture on this one. I took one of the finished product, but between having a baby and taking many pictures on a different media cards, I can't locate the one I took.
I had been looking to try some new things and spice up our menu a bit. My sister Jess has a link on her blog to a pretty cool little website called 5dollardinners.com, and I found a recipe for chicken fajita pizza that I wanted to try and it was delicious. Saturday was the perfect day for making it. Here's the recipe.
Ingredients
1 1/2 chicken breasts
1 green pepper
1 orange pepper
2 tsp fajita seasoning
1/2 cup mayo
1/4 cup milk
2 sprigs of fresh parsley
1/8 tsp dill
1 garlic clove crushed
1 small piece of onion, crushed
Salt and pepper to taste
Crust:
1 cup water
1 tsp olive oil
1 tsp salt
3 cups white flour
1 tsp sugar
1 yeast packet
1-2 cups of shredded cheese for the top
Directions
1. Place dough ingredients into bread machine and set to dough cycle. (sorry I don’t have any by hand directions!)
2. In the meantime, dice chicken and peppers (I did this last week before Blogher and froze them, as I did not want them to go to waste!). sauté with fajita seasoning until chicken pieces have cooked through, about 5-7 minutes.
3. Make homemade ranch dressing by whisking mayo, milk, parsley, dill, crushed garlic and crushed onion. Season with salt and pepper to taste. Put in fridge until ready to use.
4. Once dough cycle is complete, roll out dough onto pizza stone or baling sheet. Bake at 400 for 6 minutes. Remove and add ranch dressing, chicken and peppers. Top with cheese (I omitted cheese.) bake another 8-10 minutes, or until cheese has melted.
I used my Kitchenaid to make the dough, and it turned out beautifully. I would use the crust recipe to make any kind of homemade pizza. You'll notice this site is all about making food on a budget which is pretty sweet too.
